This cucumber in yogurt side dish for lunch or dinner is very easy to prepare and is a typical Kerala recipe.
- Cucumber (cut into small pieces) - 2 cups
- Yogurt - 1 cup
- Grated coconut - ½ cup
- Green chillies - 3
- Small onions - 2
- Cumin seeds - ½ tsp
- Mustard seeds - ½ tsp
- Curry leaves - 5 - 6
- Red chillies - 2-3
- Salt - As needed
- Grind together the grated coconut, small onions and cumin seeds.
- Cook the cucumber along with some water, chillies and salt. When the entire water in the vessel has been used up, add the ground coconut mixture and mix well.
- Season with spluttered mustard seeds, red chillies and curry leaves. After the mixture is cooled, add Yogurt and mix well.
