Vermicelli Cutlet

Vermicelli is a traditional type of pasta similar to spaghetti. Vermicelli Cutlets are good snacks and can be made quickly.
Ingredients:
- Vermicelli - 1 cup
- Potato - 1 boiled and smashed
- Carrot - 1/2 cup Cooked and smashed
- Red Onions - 1/2 cup Chopped
- Ginger - 1 tsp Chopped finely
- Garlic - 1 tsp Chopped finely
- Green Chilies - 1 tsp chopped finely
- Cilandro - 1 sprig Chopped finely
- Curry Leaves - 2-3 leaves chopped finely
- Red Chilli powder - 1 tsp
- Turmeric Powder - 1/2 tsp
- Garam Masala - 1 tsp - 1 1/2 tsp
- Black Pepper Powder - 1/2 tsp
- Salt - to taste
- Bread pieces - 2-3
- Bread Crumbs - Enough
- Egg White - 1 - 2
- Oil - For Deep fry
Instructions:
- cook vermicelli in a vessel with enough (about 5 glasses) water and 1 tbsp of cooking oil till it becomes soft and transparent. Drain the water completely by using a colander and keep aside for cooling.
- Cook the potatoes and carrot separately and smash it nice. keep aside. Add enough salt while cooking potato and carrot.
- Add 2 tbsp of cooking oil in to a thick bottom pan . Add chopped onion when the oil is hot. Sauté till onion become transparent. Add chopped ginger, garlic and Green Chillies. Saute for a minute to remove the raw smell. Add Chopped cilantros and curry leaves. Add more salt if needed .
- Add Red chilly Powder, Turmeric Powder, Garam Masala and Black Pepper Powder to this and saute well. Switch off the flame.
- Add smashed Potato and Carrot . Stir well. Add vermicelli and stir nicely. Check for salt and add if needed.
- Keep aside to cool a little. Meanwhile beat the egg white and Grind the bread pieces in a mixer grinder or food processor.
- Mix the cutlet mixture well using your hands. Add bread powder in between to get required consistency.
- Make lemon sized balls and create your preferred shapes with around 3/4 inch thickness. Keep it aside.
- Dip the created shapes in the egg white with one hand and coat with breadcrumbs using the other. Do this for all .
- Heat the oil very well for shallow frying. [Make sure to use enough oil to completely immerse the cutlet in the oil and heat it very well before the next step]
- Drop the cutlet in the boiling oil and fry it. Make sure to flip in between so both sides are cooked evenly. When the color turns brown, take it out and drain the oil in a paper towel.
- Decorate with sliced onion which is mixed with a little salt and vinegar. Could use ketchup as dipping sauce.
